A Berkshires Family Recipe: Yellow Turnip Casserole

An early frost teases a sublime taste out of what many consider the lowly root vegetable – the turnip. The turnip can be found by the bushel at outdoor farmers markets, then stored away for the holidays. This family recipe for Yellow Turnip Casserole will delight the taste buds, and perhaps even get youngsters to eat their veggies.

Ingredients:
2 cups boiled yellow turnip (mashed)
1 tablespoon sugar
1⁄4-teaspoon pepper
2 eggs, (well beaten)
1 teaspoon salt
1 cup soft bread crumbs
3 tablespoons butter, set aside

Preparation:
Place the first six ingredients in a bowl, and mix well. Butter a large casserole dish, put in mixture and dot with butter. Bake at 350-degree oven for 20-25 minutes.

  • Balance Rock State Park, named in honor of a 25-by-15-by-10 foot boulder that balances upon a small stone, is five minutes away in one direction, while a vigorous hike to the top of the state’s highest peak, Mt. Greylock, is five minutes in the other direction.

  • Pleasant Valley Wildlife Sanctuary, founded in 1929 and with 1,300 acres and seven miles of well-marked trails, is about 10 minutes away on Route 7. It includes a one-third-mile All-Persons Trail, and the moderately strenuous hike on scenic Pike's Pond Loop Trail, with an 800-foot elevation to the summit of Lenox Mountain (2,126 feet).

  • For a genuine sense of Thanksgiving, attend an evening of Shaker-inspired hospitality in the 1830 Brick Dwelling on Nov. 24. Here, recipes from “The Best of Shaker Cooking” prepared by Chef Proudy (and recognized by “Yankee Magazine” for outstanding fare and adaptations of traditional Shaker food), will be served in the candle-lit Believers' Dining Room by hosts in traditional Shaker dress.

  • Or take advantage of early skiing, since the area’s ski resorts make snow as soon as the mercury drops on the mountaintops.
